Lemony Quinoa Cucumber Pilaf
This quinoa dish is so refreshing with pops from lemon juice and fresh herbs. It's the perfect side dish (we love it with our Salmon Cakes), but also great on it's own for a healthy lunch or snack!
- 3 cups water
- 1½ cups quinoa
- 1 English cucumber peeled and chopped
- ½ cup feta cheese crumbled
- ¼ cup fresh dill chopped
- ¼ cup fresh mint chopped
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh lemon juice
- salt and pepper
In a small saucepan, combine water and quinoa, and bring to a boil. Reduce heat to low, cover, and simmer for 15 to 20 minutes, until all the liquid has been absorbed. Let it cool completely.
In a bowl, combine cooled quinoa, cucumber, feta, dill, mint, olive oil, and lemon juice. Season with salt and pepper to taste, and toss to combine. Refrigerate until serving time.
