Asian Salmon Salad
For the Honey Siracha Salmon
- 1/4 cup soy sauce or tamari for gf
- 1/2 tablespoon honey
- 1 tablespoon rice vinegar
- 1-2 tablespoons sriracha
- 1 tablespoon fresh ginger minced
- 2 cloves garlic minced
- 2 salmon filets
- sesame oil or canola oil to cook
For the Sesame Ginger Dressing
- 1/4 cup soy sauce or tamari for gf
- 1/3 cup rice vinegar
- 2 tablespoons fresh ginger grated
- 1 clove garlic grated
- 2 tablespoons honey
- 1 teaspoon sesame seeds
- 1 tablespoon sesame oil
- 1/2 cup extra virgin olive oil
For the Salad
- 4 cups baby spinach
- 1/2 cup edamame shells thawed
- 1 avocado chopped
- 1 red pepper chopped
- 1/2 cup mandarian oranges
- 1/4 cup crushed peanuts
- fresh lime juice for garnish
