Asian Salmon Salad

Ingredients
  

For the Honey Siracha Salmon

  • 1/4 cup soy sauce or tamari for gf
  • 1/2 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1-2 tablespoons sriracha
  • 1 tablespoon fresh ginger minced
  • 2 cloves garlic minced
  • 2 salmon filets
  • sesame oil or canola oil to cook

For the Sesame Ginger Dressing

  • 1/4 cup soy sauce or tamari for gf
  • 1/3 cup rice vinegar
  • 2 tablespoons fresh ginger grated
  • 1 clove garlic grated
  • 2 tablespoons honey
  • 1 teaspoon sesame seeds
  • 1 tablespoon sesame oil
  • 1/2 cup extra virgin olive oil

For the Salad

  • 4 cups baby spinach
  • 1/2 cup edamame shells thawed
  • 1 avocado chopped
  • 1 red pepper chopped
  • 1/2 cup mandarian oranges
  • 1/4 cup crushed peanuts
  • fresh lime juice for garnish
