Whipped Feta with Balsamic Roasted Strawberries

This is the perfect, easy to make recipe that's sure to impress for any party you go to (or host). It's a simple, make ahead recipe packed with flavor and it looks amazing too!
Servings 8 people

Ingredients
  

Balsamic Roasted Strawberries

  • 2 pounds fresh strawberries washed and sliced
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons honey

Whipped Feta

  • 8 ounces feta cheese
  • 1/2 cup plain greek yogurt
  • 2 tablespoons olive oil plus more for drizzling/serving
  • black pepper to taste

For Serving

  • Fresh basil chopped
  • Crusty bread sourdough or baguette
  • Crackers
  • Fruit or Veggies apples, carrots, cucumbers go great

Instructions
 

Make the Strawberries

  • Preheat oven to 350F and line a large baking sheet with parchment paper.
  • Slice the strawberries and place in a large bowl.
  • Combine the balsamic vinegar and honey together with a fork and pour over the strawberries.
  • Spread the strawberries in an even layer on the baking sheet.
  • Place in the oven to roast for about 30-35 minutes to soften.

Make the Whipped Feta

  • In a food processor, combine the feta cheese, Greek yogurt, olive oil, and pepper - blend for a few minutes until smooth, scraping the sides with a spatula as needed. Transfer to a bowl and place in the fridge to chill for 30-60 minutes.
  • When strawberries are done roasting, remove them from the oven and allow to cool for 5-10 minutes. Transfer them to an airtight container (with all the juices from the pan too) and chill in the fridge until ready to serve.

Serve It Up

  • Place the whipped feta in a large bowl, top with the roasted strawberries and sprinkle with some fresh basil and a drizzle of olive oil.
  • Serve with toasted crusty bread, crackers, fruits and / or veggies for dipping.

We love a good appetizer and are always on the hunt for something new and exciting to serve at our next get together, so when the Whipped Feta trend popped up we knew it was a must try! There are so many versions out there and I tested out several recipes but I keep coming back to this version that has the whipped feta base made with Greek yogurt (I’m always looking to make my food with better for you substitutes) and topped with balsamic roasted strawberries – it’s tangy, creamy, sweet and savory all in one and with a sprinkle of fresh basil on top it has a fresh hint of summer in it too! 

The ingredient list is short and simple – Feta (these Athenos Feta Chunks are my go to!), Greek yogurt, olive oil and pepper for the base. Strawberries, balsamic and honey for the topping. And some nice crusty bread, crackers, fruits (apples are a great complement to these flavors) or veggies (cucumbers please!) to dip in. First step is to cut up the strawberries, combine them with the balsamic and honey and roast them until they’re soft and juicy. I recommend getting the cutest helper you can find for this part: 

While those are roasting, whip up your feta by combining all the ingredients in a food processor (yup, that’s it). And then chill both the feta and strawberries in SEPARATE containers in the fridge until you’re ready to serve. The best part about this dip is that you can make it a day ahead so it’s one less thing to worry about day of. 

When you’re ready to serve it, just place the whipped feta in a bowl, top with the strawberries, sprinkle with some fresh basil and a drizzle of olive oil. Serve with your favorite dippers (ideas above) and enjoy!!
