This past weekend was filled with so many fun activities and amazing weather. To end the long weekend, Conor, Molly (our dog), and I went on a nice long hike in Boulder. Once we got home we were craving a snack that was easy to make, delicious, light and healthy, so we decided to try out this recipe for Grilled Tomatillo Salsa that Conor had recently found in his Men’s Health magazine and had been wanting to make. It was the perfect recipe because it was so simple and we got to spend even more time hanging out outside enjoying the weather while we charred all the ingredients on the grill.

I love tomatillos salsa. I mean don’t get me wrong, I love pretty much every kind of salsa, but it’s always fun to make something a little different from the norm. Tomatillos have a unique taste; kind of like a combination between a regular tomato and a little bit of tartness and citrus flavor of a lime, and they are a staple in so many Mexican dishes. To make the salsa, you first need to husk the tomatillos and rinse them well, as the husk will leave behind a sticky resin. Then heat the grill to high and place tomatillos, jalapenos, garlic, and white onion on it. You want to char all sides of them and cook them until they’re soft. This took about 5-10 minutes to do. If you don’t have a grill to use, you can easily get the same char by placing everything under the broiler in your oven.

Once everything is deliciously charred, you place it all in a blender and mix until almost smooth (or to the consistency of your liking). Then add in some minced cilantro and salt, and some water if you need to thin it out a bit, and combine. At this point you can refrigerate it if you like your salsa cool, but we were starving and wanted it right away and I absolutely loved it warm and would definitely recommend eating it that way. We had ours with some blue corn chips, but you can serve it with pretty much anything you eat salsa with; quesadillas, chips, guac, on a Mexican salad, your morning eggs, anything! It’s a great easy snack that you’re sure to love and hopefully we’ll get some more warm weather again this weekend so we’ll be inspired to make more.

Ingredients
  1. 1 pound tomatillos, husked and rinsed
  2. 3 jalapenos
  3. 2 cloves garlic
  4. 1/2 white onion
  5. 2 tablespoons cilantro, minced
  6. 1/2 teaspoon salt
Instructions
  1. Heat your grill to high heat and place the tomatillos, jalapenos, garlic, and onion on it and cook until soft and lightly charred, turning occasionally (if you don’t have a grill, you can do this under a broiler in your oven).
  2. Stem the jalapenos and then add the jalapenos, tomatillos, garlic, and onion into a blender. Mix until almost smooth. Stir in cilantro and salt to taste (add water to thin if needed). Enjoy!
