As the winter weather rolls in and the holidays are coming fast, food is constantly on our minds. With Thanksgiving, Christmas, New Years and all the days in between, we are constantly making meal plans and preparing for all of our holiday celebrations. However, there are always times that we don’t get to plan ahead, or just simply don’t have the time to make an elaborate and time consuming dish. If this happens to you and you’re looking for a quick and easy, but still delicious and impressive, side dish to serve look no further than these Roasted Red Potatoes. These potatoes are a great option because they go well with so many different dishes and you can serve them on just about any occasion from a fancy holiday dinner to a weeknight night meal at home.
The ingredient list for theses Roasted Red Potatoes is very short and you probably have the majority of them in your pantry already. All you need is red potatoes, olive oil, garlic, rosemary, salt, pepper, and a little cayenne for some heat (this is optional, but I love adding just a little spiciness to the dish). Begin by cubing the potatoes; I prefer a medium size cube, too large and they take forever to cook, and too small you don’t have enough of that soft goodness on the inside when they’re done. You then mix the potatoes in a bowl with the remainder of the ingredients, spread on a sheet pan, and pop them in the oven. That’s it!
After the potatoes have baked for about 30 minutes to an hour (depending on their size), take them out of the oven and you are presented with the beautiful site of the golden roasted potatoes and the most amazing aromas of the garlic and rosemary, yum! I love how the potatoes get nice and crispy on the outside, but still have a warm, soft texture on the inside. The garlic crisps up slightly while in the oven creating an amazing burst of flavor to complement the potatoes too. The potatoes not only taste incredible, but they are so gorgeous to present and your guests will be very impressed and think you spent way more time making them than you actually did.
- 3-4 large red potatoes, cubed (or 6-8 small)
- 2 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon cayenne
- 2 teaspoons dried rosemary
- Preheat oven to 400 degrees. Toss all ingredients together in a large bowl. Spread on a baking sheet lined with aluminum foil. Bake for 30 minutes to 1 hour until for tender and golden (toss potatoes occasionally while baking).
