No summer day is complete without a delicious dessert at the end of it and these MANGO COCONUT LAYER BARS are one of our favorites! 🥭🥥 A #glutenfree almond shortbread is topped with a smooth and creamy coconut layer then finished off with a sweet mango purée. Thanksgiving is less than a week away and my SWEET CORN TOMALITO is a dish that’s on the menu for us every year! 🌽 This recipe took me a while to perfect and now that I have, not a holiday goes by where it’s not on the menu! Three kinds of corn (corn, masa and cornmeal) are combined together with sweet sugar and butter (I never said it was healthy!) and baked slowly in a water bath in the oven for the most delicious and moist (I know, I said it) corn dish you’ve ever had 💛 Make some for your Thanksgiving dinner this year and I hope you love it as much as me!
