Rainbow Yogurt Bark
Ingredients
- 2 cups yogurt any kind but color free (greek yogurt, vanilla, etc)
- 2 tablespoons sprinkles
- food coloring get at least 2-4 different colors
Instructions
- Line an 8x8 inch baking dish with parchment paper.
- Split the yogurt into 3 separate bowls.
- Add about 2-4 drops of food coloring in each bowl and stir until combined and you get the desired color.
- Use a spoon to drop the different color yogurts in blobs all around the baking dish.
- Gently swirl together and smooth out slightly using a spatula (but be careful not to overmix the colors).
- Sprinkle the sprinkles over the top.
- Place in the freezer to chill for about 3-4 hours until firm.
- Remove from freezer and use a knife to cut into pieces. Enjoy right away or store in an airtight container for up to 2 months!
Our kids love a good sweet treat just as much as we do, but we don’t love the sugar high nearly as much so we’re always looking for fun, healthy, low sugar treats that they will still get excited about. This Rainbow Bark (or Unicorn Bark as the girls like to call it) is the perfect solution! It’s made with only yogurt, a little food coloring and some sprinkles and they think it’s the most decadent treat ever.
This is also the best dessert to make WITH your kids because it’s so simple for them to get involved with every step and I find that Maddie loves her food even more when she gets to help make it.
First we started by splitting our yogurt into three bowls to color it. I used plain Greek yogurt for ours, but you can use any kind you like as long as it doesn’t have too much color to mess with the food coloring – or you can always sweeten up your Greek yogurt a bit with a little drizzle of honey.
After you have your colors mixed up, you spoon it in big blobs into your baking dish and gently swirl it together. You just want to make sure not to overmix it or the colors wont be as vibrant and fun. Finally sprinkle on their favorite sprinkles (Maddie chose stars for this batch) and pop it in the freezer!
After a few hours it’ll firm up and you can take it out and cut it into pieces to enjoy right away or you can store it in an airtight container in the freezer for about 2 months. I hope you enjoy this little activity and snack as much as we do!
