Peppermint Bark
Ingredients
- 16 ounces chocolate chips dark or semi-sweet (or both)
- 12 ounces white chocolate chips
- 5 tablespoons crushed candy canes about 10 candy canes
Instructions
- Line a large baking sheet with parchment paper. Set aside.
- Place the dark chocolate in a microwave safe bowl and microwave on 50% power in 30 second increments, stirring between each one, until melted and smooth.
- Use a spatula to spread in an even layer on the parchment paper.
- Place in the fridge for about 20 minutes to harden slightly.
- Follow the same steps above to melt the white chocolate.
- Pour the white chocolate over top of the dark chocolate and smooth with a spatula.
- Sprinkle with the crushed candy canes and gently press into the chocolate with your hands.
- Refrigerate for about an hour until chocolate is cool and firm.
- Use a sharp knife to cut into pieces.
- Store in an airtight container in the refrigerator or freezer.
Peppermint Bark is one of my favorite holiday treats and it is by far one of the easiest treats to make, so it has quickly become a regular on my holiday baking rotation. It also doesn’t hurt that Conor is not a fan of peppermint (so weird, right?) so I know it’s the one thing I make that I get to have all to myself. Well almost – I try and give away a lot of it, but everything that’s leftover is mine to enjoy! I’m really not that greedy, peppermint bark is just THAT good. I love the combination of dark chocolate, white chocolate and peppermint candy cane pieces.
I don’t even remember peppermint bark being a thing when we were growing up, it seems like it’s only become popular in the last 10 years (ish) so my recipe is nothing that’s been passed down over the years like some of our holiday favorites, but it’s one that I found on Pinterest a while ago and have been making ever since. It’s the perfect recipe that’s the right combination of dark chocolate and white chocolate – there should always be more dark than white if you ask me. Honestly though, anything with chocolate is a winner in my book.
Most recipes you find will be very similar, but I found that the biggest difference is that some recipes have the dark and white chocolate in separate solid layers, and some swirl them together. I like the swirl because it holds the layers together a little bit better and I think that it also just looks more fun. Another reason I love peppermint bark; it’s the perfect treat to add into a bag of holiday sweets to give away as gifts to your friends, family or co-workers. This year Conor and I are combining it with our Candied Pecans, Matcha Crispy Treats and Gingerbread Cookies for our co-workers.. Who wouldn’t want that for Christmas!?
