We recently were introduced to Kevin’s Natural Foods sauce packets and have become hooked on them so we decided to enter their recipe contest! Being a new mom, going back to working full time and juggling everything else on my plate (literally) has made me start to want to make quicker and easier weeknight meals than I have in the past. However, I still am very much into eating healthy and I am Gluten-Free and now Dairy-Free so it’s not always so easy. Enter these amazing sauces; not only are they sooo delicious, but they’re all Paleo, Keto, Gluten-Free, Dairy-Free and some are even Vegan. For this recipe, I used their Thai Coconut Sauce (probably my favorite) for our #meatlessmonday dinner!
This Thai Coconut Sauce is made with the tastiest ingredients like coconut milk, lemongrass and basil. Just opening the packet will have you drooling immediately. To make this meal, I started by sautéing a bunch of my favorite veggies – zucchini, carrots, bell pepper and red onion in some coconut oil until they were slightly softened. I then added in some mango and green onion (I loooove the combination of the sweet mango with Thai food). Once those were warmed through, I added the full Kevin’s Thai Coconut Sauce packet to the skillet and tossed everything until it was all coated with the sauce and warmed through again.
There are a lot of options for serving; I chose to do mine over brown rice because we have some really good make ahead brown rice packets from Trader Joe’s that I am also obsessed with. However, if you’re looking for a completely grain-free meal, serve it over cauliflower rice! Both are equally as delicious. Also, if you’re looking to add some protein I’ve made this with the addition of baked tofu (still vegetarian) or with shrimp or chicken which are both so delicious with the sauce and veggies. However you choose to make it, you can’t go wrong with this sauce – it’s got so much flavor in it that you’ll notice I didn’t even need to add any additional seasoning!
