Chicken Avocado Burgers with Chipotle Sauce
Ingredients
For the Burgers
- 1 pound ground chicken
- 2 cloves garlic minced
- 1/2 cup bread crumbs I use GF
- 1/2 onion minced
- 1/2 cup goat or feta cheese crumbled
- salt and pepper to taste
- 1 avocado cubed
- 4 buns
For the Chipotle Sauce
- 1 cup Greek yogurt I use non-fat
- 1 small chipotle in adobo sauce minced
- 1 clove garlic minced
- dash of salt
- romaine lettuce to serve
Instructions
- In a large mixing bowl, combine the ground chicken, garlic, breadcrumbs, onion, cheese, salt, and pepper. Gently mix in avocado.
- Form mixture into four burgers and grill each side for about 5 minutes or until cooked through (you can also grill these on a grill pan inside).
- Meanwhile blend yogurt ingredients together in blender.
- Place burgers on buns and top with chipotle sauce and any other toppings you prefer (I added lettuce and more goat cheese!)
Pinterest has always been my go to for meal inspo and I could sit and scroll through recipes for hours and not get bored – I love all the fun, different ideas and recipes that I may not have ever thought of own my own. This recipe for Chicken Avocado Burgers that I found from Julies Eats and Treats is one of them. I’m right there with you, ground chicken mixed with avocado and grilled sounded a little odd so I put off making them for a while, but boy did I regret it once I did, they’re AMAZING! The avocado chunks get warmed through while on the grill and are just the perfect complement to the chicken, goat cheese, and other delicious ingredients in the burgers. Oh and did I mention they are topped with an awesome Chipotle Sauce…even better!
To make the burgers, start by mixing all the ingredients together; ground chicken, garlic, onion, breadcrumbs (I use GF breadcrumbs due to my dietary restrictions, but you can use any kind or Panko breadcrumbs work too), and finally feta cheese. I love the delicious and tangy flavors of the cheese and when mixed in with all the ingredients and when you grill the burgers it melts a little to create the most mouthwatering creamy bites. Now it’s time to mix in the avocado chunks; I used an avocado that was just ripe, so it was able to hold its texture well and I cut it in pretty good size chunks. I am obsessed with avocado, so the bigger the chunks, the better in my opinion. If you’re not looking to get big portions of avocado in every bite, just cut them into smaller cubes. Finally, drizzle the burgers with a little bit of olive oil and get them on the grill!
While the burgers are grilling, make the Chipotle Sauce. This part is super simple; just throw some Greek yogurt, one chipotle (in adobo sauce), garlic, and salt in a blender and blend until combined. Just before the burgers are done, put your buns on the grill to gently toast them. And now time to plate. I kept mine super simple and I really think that’s the way to go with these burgers so the burger can shine and not be over shadowed by excess toppings – less is more when it comes to the toppings. I served my burgers on top of some lettuce on the bun, topped with the Chipotle Sauce, and a few more crumbles of cheese (because like usual, more cheese is always better). Or if you’re gluten free like I am, I simply omitted the bun and added some extra lettuce and I totally loved it that way. You can serve them with a variety of sides like French fries, coleslaw, or this time I chose butternut squash risotto with roasted veggies… SO GOOD (but that’s a recipe for another day). So even though these burgers may sound a bit odd, you HAVE to try them out, you’re totally going to fall in love with them like I did!
