I am in my 8th month of pregnancy, the weather outside is heating up and there is nothing better than a big bowl of ice cream at the end of a long day. Ice cream has definitely been one of my cravings that I can’t turn down these days, but in typical Amanda fashion I am always looking for a healthier alternative to the sweets I am craving and this Peanut Butter Banana NICE Cream is just that. It’s got all the flavor and that creamy texture that’s just like ice cream, but it’s made with healthier ingredients that have a minimal guilt factor associated with them!
What goes into this delicious treat that gives it the taste and texture of ice cream? BANANAS – as I’m sure you picked up from the title of the post! When I have a bunch of bananas that are about to go bad – and I have already made my loaf of Banana Bread for the week – I slice them up and put them in a ziplock bag in the freezer to keep until I’m ready to use them. They make the perfect base for this Nice Cream because when they’re blended up they give the perfect smooth and creamy texture.
Combine the frozen bananas with some peanut butter (because what’s better than peanut butter and banana?), some cinnamon to add a little depth and elevate the flavor and almond milk to help things get going in the blender. Blend in a high speed blender -until the mixture is nice and smooth (you may need to add a little extra milk to help it along) – my Vitamin is my favorite thing ever and it works like a charm, but if you don’t have one you could definitely use a food processor too and that’ll get the job done. Once it’s done, stir in the chocolate chips by hand and then enjoy immediately and/or save it in the freezer in an airtight container. I hope you enjoy this indulgent (but guilt-free) dessert as much as I do!!

Peanut Butter Banana Nice Cream
4 cups sliced bananas, frozen
1/4 cup creamy peanut butter
1/2 – 3/4 cup plain, unsweetened almond milk
1 teaspoon cinnamon
1/3 cup dark chocolate chips (regular or mini)
Place the bananas, peanut butter, 1/2 cup almond milk and cinnamon in a high speed blender (or food processor) and blend on high until everything is incorporated and smooth, adding more milk if the mixture is too thick.
